Less meat, more plants: How the menu in German university cafeterias has changed over the decade
nature.comA study conducted by scientists from the University of Constance and HTW Berlin shows a profound transformation in dietary habits and offerings in German student cafeterias over the decade (2015–2024). The analysis, based on 3.7 million menu options from 340 cafeterias, reveals a clear shift away from meat and fish meals towards plant-based dishes — particularly purely vegan options.
Key findings from the study:
- Increase in plant-based options: The share of plant-based dishes (vegetarian and vegan) rose from 63.7% in 2015 to 70.5% in 2024.
- Explosion in the popularity of vegan dishes: The most significant change was noted in the category of strictly vegan dishes, whose share in the menu increased nearly fourfold during the analyzed period, partially replacing not only meat but also traditional vegetarian dishes containing dairy or eggs.
- Decrease in animal-based dishes: The percentage of meals based on meat and fish fell from 36.3% to 29.5%.
- Practical significance: The results indicate that mass catering in educational institutions can effectively support the achievement of climate and health goals through a systematic shift in offerings towards a plant-based diet.
