More than 120 chefs are removing farmed salmon from their menus.
offthetable.org.ukThe open letter "Nobody ordered this" was published by the Off The Table campaign, led by the British organization WildFish. It was signed by, among others, Francis Mallmann, Alice Waters, Dan Barber, Rasmus Kofoed, Dominique Crenn, and Hugh Fearnley-Whittingstall.
The signatories state that 99% of Atlantic salmon in restaurants and stores comes from industrial cages in the sea. They point to water pollution, the transfer of sea lice and diseases to wild fish, escapes of farmed fish, and the fact that it takes hundreds of wild fish to feed one salmon.
The chefs declare that they will not serve such salmon until the industry stops causing these harms. They also encourage other chefs and restaurants to join them.
