Japanese manufacturers are betting on plant-based seafood alternatives
japantimes.co.jpIn August, Kanetetsu Delica Foods from Hyogo Prefecture launched "Hobo Tako"—a plant-based octopus substitute made from dietary fiber and starch, intended, among other uses, for takoyaki. Ikeda Tohka Industries from Hiroshima developed "bonito" flakes made from soy protein, used in hotels and restaurants, including in vegan dishes. Starting early next year, Yamaya Communications will offer "Daitai Mentaiko," a starch-based product that contains half as much salt, though the marinade includes roe extract, so it is not vegan.
