How do vegans get enough iodine?

Short answer

Iodised salt, a limited amount of seaweed with a known iodine content, or a supplement if needed. Dairy and fish are out, so iodine has to be planned.

NIH: seaweed iodine content swings widely (excess risk). The BDA points to iodised salt.

Do not eat “a handful of kelp” on an empty stomach as a detox. The thyroid is a medical topic.
